Tomato Pie

This is the perfect recipe for summer tomatoes and fresh basil.  It smells so good cooking that you'll want to pluck it out of the oven and devour it before it is done cooking.

bulletFresh or Frozen deep pie crust (Pillsbury fresh pie crust is best)
bullet3-4  medium-sized Fresh Summer Tomatoes (beefsteak is best)
bullet3-6 T Fresh grated parmesan cheese
bulletdash of italian seasoning
bullet10 or so  large fresh basil leaves (more if smaller)
bullet1/2 C mayonnaise
bullet1 C shredded sharp cheddar cheese
bullet1/2 chopped white or vidalia onion

Cook the pie crust per the pie crust directions.  After the crust cools, spread the parmesan on the bottom.  Lay out the sliced tomatoes in layers with italian seasoning, basil, and onions.  Mix mayo and cheddar cheese and spread on top.  If you really like cheese, sprinkle some extra cheese on top.  Bake at 325 for 30 minutes.

Substitution: Avoid low fat cheese & mayo the first time you make it so you can taste the potential.
